About the position

Brown Donkatsu is a popular South Korean franchise, founded in Seoul in 1986, that specializes in massive, ultra-crispy, Korean-style deep-fried cutlets. The franchise is famous for making its own light, airy panko breadcrumbs from scratch and smothering the cutlets in a signature, slow-cooked savory brown sauce.

The Franchisor is seeking a skilled Speciality Baker for its bread and panko production facility. The operation produces bread from scratch using specialized baking methods, then processes it into fresh, preservative-free panko breadcrumbs for wholesale supply for franchisees across Ontario.

The role centres on dough preparation, fermentation, proofing and baking to achieve the bread structure and moisture characteristics needed for our distinctive panko texture, shape and flake size. Responsibilities also include production planning, ingredient purchasing, quality control and training production staff.

Duties and responsibilities

  • Prepare bread dough according to established recipes and production requirements, accurately weighing ingredients and controlling mixing and fermentation.
  • Divide, shape and pan dough, adjusting proofing times and temperatures to achieve the required structure and consistency.
  • Apply specialized bread-baking methods, monitoring oven temperatures, baking times and moisture levels to produce bread suited to the required panko specifications.
  • Assess dough and bread throughout production, identifying variations and making appropriate adjustments within established procedures.
  • Cool and condition baked bread, then process it into panko with consistent texture, shape and flake size.
  • Check finished products against established quality and freshness standards.
  • Review orders received through the online wholesale ordering system and forecast demand based on current orders, seasonal changes and anticipated express orders.
  • Develop daily baking schedules and calculate the quantities of bread and finished panko required to meet regular orders and maintain a limited reserve for express orders.
  • Communicate daily production quantities and work assignments to staff, adjusting schedules as order volumes change.
  • Calculate ingredient requirements and purchase baking ingredients and production supplies according to inventory levels and forecast demand.
  • Balance production and stock levels to fulfil wholesale supply commitments while minimizing surplus and spoilage, taking account of the short shelf life of preservative-free panko.
  • Train and supervise production staff in the company’s specialized baking and panko-making methods, ensuring consistent results and appropriate handling of confidential recipes and process information.
  • Maintain accurate production and inventory records, and package and label products for wholesale distribution.
  • Follow established food safety, sanitation and equipment-cleaning procedures.

Qualifications and skills

  • At least two years of baking experience, working in a bread production facility would be an asset.
  • Practical competence in bread dough preparation, fermentation, proofing and baking.
  • Ability to control baking conditions and assess bread structure, moisture and finished-product consistency.
  • Ability to learn and accurately apply specialized baking and processing methods.
  • Strong numerical and planning skills for calculating ingredient quantities, forecasting demand and scheduling daily production.
  • Ability to manage short-shelf-life products, balancing order fulfilment with waste reduction.
  • Ability to train staff, explain production procedures clearly and monitor adherence to quality standards.
  • Familiarity with food safety and sanitation practices.
  • Ability to use an online ordering system and maintain production records.
